Tangy lime brightens the flavour of this meal. Reminiscent of the warmer climates.
|1||(800 g) Schneiders® Olde Fashioned Fully Cooked Smoked Ham|
|4 tbsp||(60 mL) Lime juice|
|3 tbsp||(45 mL) Honey|
|1/4 tbsp||(1 mL) Salt|
|1/4 tbsp||(1 mL) Pepper|
|RICE AND BEANS:|
|4 cups||(1 L) Cooked white rice|
|1 1/2 tbsp||(22 mL) Ground cumin|
|1/8 tsp||(.5 mL) Cayenne pepper|
|Salt and pepper|
|1||(398 mL) Can red beans, rinsed and drained|
|1/4 cup||(60 mL) Chopped fresh cilantro|
|Juice of one lime|
PREHEAT oven to 375°F (190°C). Slice ham into 6 – ¾” (2 cm) steaks. Place steaks on a baking sheet lined with parchment paper.
WHISK together lime, honey, salt and pepper. Brush each steak liberally with the glaze. Bake for 15-20 minutes.
PREPARE rice according to package directions.
HEAT a small skillet over medium and toast cumin and cayenne for about 30 seconds until fragrant. Add to the cooked rice and season with salt and pepper. Stir in beans and cilantro. Squeeze time juice over the rice mixture and toss to coat. Serve warm with ham steaks and additional glaze if desired.
