With summer almost over I am sneaking in as much time with my grill as I can. I know that before too long it will be buried in snow. While I know some Canadians that barbecue all year round, I’m a bit of a wimp when it comes to cold. The only grilling I do in the winter is the fake kind that is done on my panini press. While I am still learning my way around the grill i still have a few favourites, barbecued Maple Mustard Glazed Ham Kabobs are one of them.

Ingredients

8 bamboo skewers
1 Schneiders Country Naturals Smoked Ham cut into large cubes
1 red onion
1 zucchini
2 red, yellow or orange peppers
8 Large Mushrooms
1 tbsp olive oil
1/4 cup maple syrup
3 tbsp Mustard

Directions

Heat up the grill. Soak 4-8 bamboo skewers in clean water. Cut the ham into slightly larger than bite sized cubes. Place in Ziplock bag and add the maple mustard glaze. Chop up the onion, zucchini, and peppers in large bite sized, or slightly bigger pieces. Arrange cubed meat and vegetables on wet skewers. Brush lightly with olive oil. Place on hot grill and grill 10-15 minutes flipping over halfway through. I like my veggies crispy so I only do 5 minutes per side.

Serve along side leftover whole grain and wild rice and some fresh Taber corn for a delicious meal in minutes!

Total prep and cooking time is 15 minutes if you pre-cut and wash the vegetables!
