|4||Maple Leaf Prime Naturally® Split Chicken Breasts|
|Salt and pepper|
|3 tbsp||(45 mL) Olive oil, divided|
|2||Cloves garlic, sliced|
|3 tbsp||(45 mL) Pure maple syrup|
|2 tbsp||(30 mL) Grainy mustard|
|.5 cup||(125 mL) Chicken stock|
|3 tbsp||(45 mL) Apple cider vinegar|
|4||Sweet potatoes, peeled and cut into small chunks|
PREHEAT oven to 400°F (200°C).
SEASON chicken with salt and pepper. Heat 1 tbsp (15 mL) oil in a large skillet over medium-high heat. Brown chicken, about 3 minutes per side.
COMBINE remaining oil, onion, garlic, maple syrup, grainy mustard, stock and vinegar in a small bowl.
ARRANGE chicken and sweet potatoes in a 9 X 13 inch (3.5 L) baking dish. Pour sauce over and toss together.
BAKE in preheated oven for 40 to 50 minutes or until internal temperature of chicken reaches 185°F (85°C) and sweet potatoes are tender and brown, basting occasionally.
