Surprisingly bright flavour with the mint and lime. A bit of added sweetness from the rum, divine!
|1/2||Can limeade, thawed|
|2 tbsp||Dark rum|
|Salt & pepper|
|1/3 cup||Chopped fresh mint|
|1||Maple Leaf Prime Naturally® Whole Chicken, cut into 8 pieces|
WHISK together the first 8 ingredients and pour into a large re-sealable plastic bag. Add chicken pieces, seal the bag and massage to coat. Refrigerate for 2-4 hours.
PREHEAT grill to medium. Remove chicken from the marinade and pat dry. Pour the marinade into a small saucepan. Bring to a boil and simmer for 2 minutes.
Lightly coat the grill with non-stick cooking spray. Grill chicken for 25-30 minutes, turning frequently and basting with the remaining marinade. Chicken is cooked when it is nicely char-grilled and the internal temperature reaches 185°F (85°C).
Substitute Maple Leaf Prime Naturally® Chicken Thighs and Maple Leaf Prime Naturally® Chicken Drumsticks for the whole chicken.
Serve with coconut rice.
