This is a great recipe for staying in and watching movies on a cold Canadian winter's night.
|4||large sweet potatoes 1 pp|
|4||maple leaf prime boneless skinless chicken breats|
|2 tsp||veg oil|
|1/2 cup||maple syrup|
|1/2 tsp||mustard (dry)|
Peel and chop sweet potatoes into cubes. Place in pot and cover with water, bring to boil. Adjust heat to medium so it doesn't boil over and cover with lid. Simmer for 20 minutes or until tender.
drain and return to pot, adding butter and mashing until smooth. Can slo use hand blender.
In a large sauce pan add oil and heat on medium add onions and cook for 2 minutes, add chicken and cook for 6-8 minutes until brown and no longer pink on inside. Spice with salt pepper (ginger and dry mustard optional) about 4 minutes in. Remove chicken from pan and set aside.
Add maple syrup to the pan and simmer as it reduces for 2 minutes. pour syrup reduction over chicken and onion mixture. To serve plate potatoes, sprinkle spinach over top then pour chicken, syrup and onion over top.
