1/4 cup packed brown sugar
3 tbsp pure maple syrup
1/2 tsp each vanilla and maple extract
1/2 tsp baking soda
1 lg. egg, beaten
1/3 cup sour cream
1/4 cup milk
1/4 cup oil
1 tbsp rendered bacon fat
6 slices, slices, Thick Cut Maple Leaf Bacon, diced
1 Recipe of Glaze, recipe below
1 1/2 cup icing sugar
1 tsp rendered bacon fat
5 tbsp milk or more if you want it thinner
1 tsp each of Vanilla and Maple extract or 1 tbsp pure maple syrup

Filling & Topping:
Crisp bacon in a small skillet on high. Reserve the bacon fat as it begins to render into a small container. Turn the heat to med. and turn the bacon over to render and crisp all over. Break into pieces.
Donuts: Mix the wet ingredients together in a large bowl. Add the dry ingredients and stir with a spatula only until blended.
Distribute batter into a sprayed/greased 6 donut pan. Press bacon pieces into the batter and cover with extra batter. (Save some bacon for the top of the donut )
Bake in a preheated 375F oven for 10-12 min. Place a baking sheet under donut pan for support.
Cool for 5 min. Gently loosen sides with a toothpick/skewer to remove. Cool completely.

Whisk ingredients together. Sieve to remove any lumps. Dip donuts into glaze and place onto a rack to drip. Sprinkle with remaining bacon bits for decoration

This is a decadent treat that pays homage to Canada's flavours
