|3 tbsp||(45 mL) Maple syrup|
|1 tbsp||(15 mL) Soy sauce|
HEAT oil in a large non-stick skillet over medium-low. Sauté chicken for 4-5 minutes per side or until golden brown. Add onions and continue to cook until onions are soft and fragrant, about 3-4 minutes. Add chopped apples and cook until slightly softened, about 3-4 minutes. Add maple syrup and soy sauce, bring to a boil then reduce heat and simmer for 10-15 minutes or until apples are cooked and the internal temperature of the chicken has reached 165°F (74°C). Season to taste with salt and pepper and serve with roasted potatoes, baby carrots and green beans.
