Maple BBQ Pulled Chicken in Slow Cooker

Ingredients

1 Package Maple Leaf Prime Naturally® Boneless Skinless Chicken Thighs
1/2 cup home made BBQ sauce
1/2 cup Onion, chopped
1/2 cup Red pepper, chopped
1/4 cup (80 mL) Balsamic vinegar
1/3 cup (80 mL) Maple syrup
1/2 tsp (2 mL) Smoked paprika
1/4 tsp (1 mL) Salt
1/4 tsp (1 mL) Pepper

Directions

PLACE chicken in slow cooker. Mix together the remaining ingredients and pour over chicken thighs. Stir to combine. Cover and cook on high for 4 hours or on low heat for 8 hours or until chicken is very tender. Turn off slow cooker and transfer chicken to a plate. Using two forks shred the chicken. Place chicken back into the sauce and keep warm until ready to serve.

Notes

Serve chicken on slider or burger buns topped with coleslaw or try it served over a baked sweet potato.
