These tasty Maple Bacon Pancakes will be a huge hit for any brunch. Make ahead of time and keep warm. Serve with a side of scrambled eggs and a bowl of fresh fruit salad.


4 Rashes of Maple Leaf Bacon
2 cups Prepared Pancake mix batter
4 tbsp butter
125 ml Pure Maple Syrup


Grill all bacon until crispy. Place on Paper towel to absorb grease. Make 2 cups of pancake mix batter by following directions on pancake mix package. Heat up a fry pan with 1 Tbsp butter. Once bubbling,Use a 1/2 cup size-measuring cup, pour batter into fry pan in the shape of a bacon rasher. Repeat, so you have 2 pancake rectangles side by side. Place a cooked bacon rasher on top of each pancake and lightly press in. Grill on low-medium until bubbles form in the batter. Flip pancakes and add the other 1 Tbsp butter cook pancakes until done. Using a spatula remove, and repeat for the next 2 bacon pancakes. Plate and drizzle Maple syrup over the top. Serve warm. Enjoy!
