One of my favorites.

Ingredients

3 Egg whites
3/4 cup Sugar
2 tbsp Cornstarch
1/8 tsp Salt
4 cups Coconut

Directions

In top of double boiler, beat egg whites until stiff. Place over boiling water. Stir sugar, cornstarch and salt together. Add to whites, stirring to mix. Cook until crust forms around edge, about 5 minutes. Remove from heat. Stir in coconut and shape into balls. Drop by spoonful onto greased cookie sheet. Bake at 350 F for 12-15 minutes until slightly browned. Makes about 3 1/2 dozen cookies.
