Fresh Canadian lobster might just be the best thing about this country after all-- you'll agree after you make these scrumptious rolls!

Ingredients

2 cups (500 mL) Chopped fresh lobster meat
2 Ribs celery, finely chopped
1 tbsp (15 mL) Lemon juice
1/3 cup (80 mL) Mayonnaise
1 1/2 tbsp (22 mL) Chopped fresh chives
Salt and pepper
1/3 cup (80 mL) Melted butter
6 Dempster’s® Top Sliced Hot Dog Buns
1 cup (250 mL) Shredded lettuce

Directions

COMBINE lobster, celery, lemon juice, mayonnaise, chives, salt and pepper in a medium bowl. Lightly brush the outside of each bun with melted butter. Heat a large skillet over medium-high heat and grill the buns, cut side down for 1-2 minutes per side or until golden.

ASSEMBLE by placing shredded lettuce in each bun and top with a scoop of the lobster mixture.
