A no fuss dish that can be made quickly and enjoyed. Bubbly cheesy mashed potatoes top a savory chicken casserole. An addition of colourful tart cranberries add a Festive touch to this hearty meal.


1 1/2 lb Maple Leaf Prime Ground chicken or turkey
2 tbsp. vegetable or canola oil
1 carrot peeled and diced
1 tsp rosemary
1 leek washed well and cut into thin slices or coins
1 cup mushrooms
1/8 cup of white wine
1 tsp salt
1/2 cup fresh cranberries
1/4 cup leftover gravy or chicken broth
4 cups cooked peeled potatoes mashed or riced
1/4 cup butter
1 cup milk
2 lg eggs
1 cup cheddar
1 tsp salt
2 tbsp. crackers finely smashed


Sauté the carrots, leek and mushrooms in the oil until slightly softened.
Add the chicken, turn the heat up to #7 or #8 and brown for flavor.
Add the seasoning and herbs.
When liquids reduce add the wine and cook off for 3 minutes.
Stir in the cranberries and gravy cook for another 3-5 minutes.
Scoop into a casserole dish, spreading to the sides.
Meanwhile stir the butter and milk into the hot mashed potatoes.
Season and stir in the cheddar until combined. Cool slightly then stir in the egg.
Top the filling with the potatoes, score a design with a fork.
Sprinkle lightly with crumbs.
Bake in a preheated 375F for 40 min until golden on top.


Turkey can be substituted.
This can be prepared and frozen before baking then popped into the oven frozen. Baking time will increase to 1hr. approximately.
