This lightened version of Caesar salad will become a must have in your recipe collection.

Ingredients

CROUTONS:
1 Dempsters® Ovenfresh Baguette, cut into 1 inch (2.5 cm) cubes
1 tsp (5 mL) Italian seasoning
.25 cup (60 mL) Olive oil
Salt and pepper
DRESSING:
1 tbsp (15 mL) Dijon mustard
1 tsp (5 mL) Worcestershire sauce
3 Cloves, garlic, minced
1 tsp (5 mL) Anchovy paste
Dash hot sauce
.33 cup (80 mL) Mayonnaise
2 tbsp (30 mL) Lemon juice
.5 cup (125 mL) Olive oil
.25 cup (60 mL) Freshly grated Parmesan cheese
Salt and freshly ground pepper
SALAD:
1 Head Romaine lettuce, torn
8 Slices Maple Leaf® Bacon, chopped and cooked crisp

Directions

CROUTONS:
PREHEAT oven to 375°F (190°C). Place bread in a large bowl. Drizzle with olive oil. Toss with Italian seasoning and salt and pepper. Spread on a baking sheet and bake in preheated oven for 15 minutes or until crisp and golden brown.

DRESSING:
WHISK together all ingredients in a small bowl and set aside.

SALAD:
ASSEMBLE salad by tossing lettuce, bacon and croutons together. Drizzle with salad dressing, toss gently and serve immediately.
