Fresh, moist and delicious, this recipe is also easy to make.

Ingredients

2 Maple Leaf Prime's® Fresh Chicken breasts, cooked and sliced thinly
1 Pkg Dried rice roll sheets
1/2 Cucumber, julienned
1 Carrot, julienned
1/2 Mango, julienned
3 stalks of lemongrass, white part only, roughly chopped
1 Garlic clove
2 tbsp Fresh ginger
1 Red onion, sliced

Directions

To make the lemongrass paste: put the lemongrass, garlic clove, ginger and red onion into a blender and blend until fine.

Gently dip the rice sheets into the warm water until softened. Spread onto a wide plate. Spread 1 tablespoon of the lemongrass paste on to each rice sheet. Put on the chicken, toppings and wrap into a spring roll shape. Serve immediately.
