This is my favourite way to roast chicken. Lemon, garlic and thyme! It turns out perfectly every time and it tastes delicious!
|1/4 cup||(60 mL) Softened butter|
|2 tsp||(10 mL) Chopped fresh thyme|
|2||Cloves garlic, minced|
|1||Maple Leaf Prime Naturally® Whole Chicken|
|Salt and pepper|
|1 tsp||(5 mL) Paprika|
|5||Cloves garlic (not peeled)|
PREHEAT oven to 375°F (190°).
MIX together butter, herbs, lemon zest and minced garlic in a small bowl.
PLACE chicken in a small roasting pan. Gently loosen the skin of the chicken by running your fingers underneath to separate from the meat without tearing. Loosen from the breast and legs then stuff lemon butter under the skin spreading over the entire chicken between the skin and meat. Rub any residual over the outside of the chicken. Season the outside with salt, pepper and paprika.
STUFF the cavity with lemon, garlic cloves and fresh thyme.
ROAST for 1 ½ hours or until the internal temperature reaches 185°F (85°C). Baste after each thirty-minute interval. Allow to rest for about 10 minutes then serve.
For an easy one-dish meal, add root vegetables and mini potatoes to the roasting pan for the last 30-40 minutes.
