|1||(454 g) Package Maple Leaf Prime Naturally® Extra Lean Ground Chicken|
|4||Green onions, finely chopped|
|1||Red chili, minced|
|2 tbsp||(30 mL) Red curry paste|
|1 tsp||(5 mL) Brown sugar|
|1 tsp||(5 mL) Ground coriander|
|1 tsp||(5mL) Ground cumin|
|1/2||(125 mL) Panko bread crumbs|
|1/2||(125 mL) Sweet Thai chili sauce|
SOAK lemon grass in water for 30 minutes.
PREHEAT BBQ to medium high, lightly coating the grill with non-stick cooking spray.
GENTLY mix all ingredients, except the lemon grass and Sweet Thai chili, in a large bowl, using your hands. Divide chicken mixture into eight meatballs around the end of each stalk of lemon grass. Place on preheated grill for 10-12 minutes, turning frequently, until char grilled and the internal temperature reaches 165°F (74°C).
BRUSH lightly with Sweet chili sauce and serve immediately.
