8 Stalks lemon grass
1 (454 g) Package Maple Leaf Prime Naturally® Extra Lean Ground Chicken
4 Green onions, finely chopped
1 Red chili, minced
2 tbsp (30 mL) Red curry paste
1 tsp (5 mL) Brown sugar
1 tsp (5 mL) Ground coriander
1 tsp (5mL) Ground cumin
1/2 (125 mL) Panko bread crumbs
1/2 (125 mL) Sweet Thai chili sauce


SOAK lemon grass in water for 30 minutes.

PREHEAT BBQ to medium high, lightly coating the grill with non-stick cooking spray.

GENTLY mix all ingredients, except the lemon grass and Sweet Thai chili, in a large bowl, using your hands. Divide chicken mixture into eight meatballs around the end of each stalk of lemon grass. Place on preheated grill for 10-12 minutes, turning frequently, until char grilled and the internal temperature reaches 165°F (74°C).

BRUSH lightly with Sweet chili sauce and serve immediately.
