This is a fresh, summery sandwich. A hint of basil, toasted walnut and salty capers, mixed with chicken and served with lemony vinaigrette over lettuce on lightly toasted, Villaggio® Original Thick Sliced Italian Style White Bread.
|1/2 cup||(125 mL) Cooked chicken, shredded|
|1 tbsp||(15 mL) Mayonnaise|
|½ tsp||(2 mL) Minced basil|
|1 tsp||(5 mL) Chopped capers|
|1 tbsp||(15 mL) Toasted walnuts, coarsely chopped|
|1 ½ tbsp||(22 mL) Lemon juice, divided|
|Salt and pepper|
|1 ½ tbsp||(22 mL) Walnut oil|
|¼||(60 mL) Shredded lettuce|
|2||slices Villaggio® Original Thick Sliced Italian Style White Bread, lightly toasted|
MIX chicken, mayonnaise, basil, capers and 1 tsp (5 mL) of lemon juice. Add toasted walnuts and stir gently to combine. Season with salt and pepper and set aside.
WHISK remaining lemon juice and walnut oil together, drizzle over the lettuce and set aside.
ASSEMBLE sandwich by placing the chicken mixture on one slice of bread. Top with lettuce and vinaigrette and the remaining toasted bread.
