This recipe has been passed down a few generations... it is the best chicken soup around - perfect for a cold winter day after outdoor activities! Its the perfect "Lovey-Dovey Lovebirds" recipe!


1 cup chopped chicken thighs
1 cup carrots
1 cup celery
1/2 cup chopped yellow onion
3/4 cup peas (can be frozen)
1/2 tsp salt
1/2 tsp pepper
1 tbsp fresh chopped parsley
6 cups chicken stock
1 tbsp unsalted butter


Set oven to 350F. Place 2-3 chicken thighs onto an aluminum lined baking sheet. Drizzle with Olive Oil and sprinkle with salt and pepper. Let cook for 15 minutes. Remove from oven and chop into small pieces. Place them into a large pot. Chop 1 cup carrots, 1 cup celery, 1/2 cup yellow onion. Add these to large pot. Add 3/4 cup of peas to pot (can be frozen peas). Add 6 cups of chicken stock, season with salt and pepper. Then add my secret ingredient: 1 tablespoon of unsalted butter. It gives it a nice rich taste! Bring to boil and then add 1 tbsp of fresh chopped parsley. Turn down heat, allow to simmer for 25 minutes. Can be enjoyed on its own or with pasta or rice. Enjoy! I know my children love it!
