This is an easy, one pot version of a Cajun Classic.
|10||Pepperettes, cut into bite sized pieces|
|1.5 cup||long grain rice|
|2.5 cup||low sodium beef broth|
|1 cup||chopped fresh celery|
|1 cup||chopped white onion|
|1 cup||chopped green pepper|
|1/2 tsp||chili powder|
|1/4 tsp||fresh ground pepper|
|1 tbsp||olive oil|
Heat oil in a large skillet over medium-high heat. Add pepperettes, onions, peppers, and celery. Cook for 7 minutes, stirring frequently. Add beef broth, salsa, spices, and rice. Bring to a gentle boil. Cover and simmer on medium-low heat for 20-25min, stirring frequently.
You can use pork or turkey pepperettes for this recipe. Kick it up a bit by using a spicier salsa or pepperette!
