A hearty tasty lunch that packs in nutrition and fibre for sustained energy to last until dinner time.
|2||Schneiders Original Juicy Jumbo hot dogs|
|1.5 cups||fresh ravioli stuffed with kale and cannoli beans, uncooked|
|1 cup||jarred tomato basil pasta sauce|
|.3 cup||shredded/grated old cheddar cheese|
|.25 cup||Washed, minced curly parsely|
|.5||Cob of fresh corn|
|Salt and pepper, to taste|
|1||Whole fresh peach|
|8 oz||2% milk, cold|
Place the hot dogs into a large pot of boiling water.
Boil for three minutes.
Add the ravioli into the boiling water and continue boiling for another four minutes.
During this time place the pasta sauce into a small saucepan and heat to a simmer.
Remove the pot of pasta and sausages and strain.
Slice the hot dogs into bite sized pieces.
Toss with the ravioli.
Place into a serving bowl.
Spoon the tomato sauce on top. Mix lightly.
Place the cheese on top of the pasta and sauce and finish the dish by topping with the parsely
Place the bowl of pasta onto a serving plate.
During this time place the cut, cleaned and washed corn into the microwave at high for two to three minutes.
Cut into halves for better handling by little fingers.
Place the corn onto a plate and butter, adding salt and pepper to taste.
Place the corn onto the serving plate.
Wash and dry the peach.
Cut it into two, remove the pit and cut into slices.
Place slices onto the serving plate..
Pour the cold milk into a glass and serve alongside of the lunch.
The pasta portion of this lunch recipe will feed one hungry teen or up to two little ones. Double up the vegetables, fruit and milk if serving two little ones.
