Spicy, tender morsels of chicken, smothered with cheese and the cool deliciousness of fresh mango, pepper and onion all of a crispy, light tortilla!
|2||Dempster’s® Original Small Tortillas|
|1 tbsp||(15 mL) Olive oil|
|1/4 cup||(60 mL) Ready prepared jerk sauce|
|1/2 cup||(125 mL) Chopped, cooked chicken|
|3/4 cup||(175 mL) Grated Mozzarella cheese|
|1/3 cup||(80 mL) Diced mango|
|1/4 cup||(60 mL) Diced red pepper|
|1/4 cup||(60 mL) Thinly sliced green onion|
|2 tbsp||(30 mL) Grated Parmesan cheese|
PREHEAT oven to 375°F (190°C).
LINE two baking sheets with parchment paper and place a tortilla on each. Brush lightly with olive oil and bake for 5 minutes. Brush each tortilla with 1 tbsp (15 mL) of jerk sauce. Toss the chopped chicken with the remaining jerk sauce. Sprinkle each tortilla with cheese, top with chicken, mango, red pepper and green onion. Sprinkle with Parmesan cheese and return to the oven for 5-10 minutes or until the tortilla is crisp and the cheese is bubbly.
Substitute BBQ sauce for jerk sauce for a milder flavour.
