About this Recipe

The flavours from the smoked sausage infuse this classic dish with a real punch. A great way to get more veggies into your family!

Ingredients

4 Schneiders Mild Italian Smoked Chicken Sausages
1 tbsp olive oil
1/2 cup chopped green bell pepper
1 cup chopped spanish onion
1 1/4 cups chopped celery
2 3/4 cup chicken broth
1 1/2 cup uncooked white rice
1 cup medium salsa
1/2 cup marinara sauce

Directions

Heat olive oil in a large skillet over medium high heat.
Cut sausages into 1/4" slices. Add to skillet, cook for 5 minutes stirring frequently.
Add onions, green pepper, and celery. Continue to stir frequently for 5 minutes.
Add chicken broth, rice, salsa, and marinara sauce. Mix well. Bring to a light boil, then reduce heat to low. Cover and cook for 20 minutes until rice is soft.

Notes

You can make this with a hotter salsa if you like things spicy, or a mild salsa if you prefer to loose the spice.
