About this Recipe

Flavoured with spicy jalapeno, cheddar cheese and crispy bacon. Homemade cornbread with a twist!

Ingredients

5 Slices Maple Leaf® Bacon, diced
1 cup (250 mL) Flour
1 cup (250 mL) Cornmeal
.5 cup (125 mL) Sugar
2.5 tsp (12 mL) Baking powder
1 tsp (5 mL) Salt
1 cup (250 mL) Milk
.33 cup (80 mL) Vegetable oil
1 Egg
.5 Jalapeno pepper, seeded and finely diced
.5 cup (125 mL) Cheddar cheese, cut into ¼” (5 mm) cubes

Directions

PREHEAT oven to 375°F (190°C).

FRY bacon until crisp and golden. Stir together all of the ingredients in a large bowl. Lightly coat a 10” (25 cm) iron skillet with non-stick cooking spray. Pour the mixture into the skillet.

BAKE for 20-25 minutes.
