Fresh ingredients make this sandwich tasty and nutritious.
|1||Dempsters English Muffin|
|1 tsp||olive oil|
|3 tbsp||chopped red bell pepper|
|1||plum tomato - chopped|
|1/2 cup||chopped spinach leaves|
|1 tsp||green onions chopped|
|1/8 tsp||crushed garlic|
|1/4 cup||whole spinach leaves|
|salt, pepper to taste|
In non-stick skillet add 1 tsp. butter & cook egg till done on medium heat. Set aside. Return skillet to medium heat. Add the olive oil, red pepper, tomato, spinach, green onions and crushed garlic. Cook stirring for 1 1/2 minutes.
Split english muffin in half, toast & butter each side with remaining 1 tsp. butter. On bottom half of english muffin place the spinach leaves, tomato mixture & egg. Top with other half of english muffin.
