Italian Sausage and Peppers Penne Pasta

Sausage and Peppers are an Italian Sunday Dinner Classic and when you add Penne and make with Maple Leaf Prime Turkey sausage you've got a a hearty dinner perfect for any day of the week.


Ingredients

1 Pkg Maple Leaf Sweet Italian Turkey Sausage.
3 tbsp Olive Oil for Frying
1 Green Bell Pepper sliced in ling strips
1 Red Bell Pepper sliced in long strips
1 Orange or Yellow Bell sliced in long strips
6 Garlic cloves sliced (not chopped)
1 Large yellow onion sliced
1 796 ml can Whole San Marzano Tomatoes Hand crushed
4 tsp Dried Oregano
.25 cup Red Wine (optional)
1 Pkg Dried Penne

Directions

Heat olive oil over in a large pan with lid. Add the sausages and brown them slowly once oil is ready.

Cook for several minutes, turning occasionally so they brown on all sides. When the sausages are browned, remove from the pan and set aside. Slice once cool

In same pan, Increase heat to high and add onions and peppers. Toss so they get coated and sear, stirring until they start to blacken. Then add the garlic and cook for only 1 more minute to avoid garlic becoming bitter.

Add red wine if using and scrape the bottom of the pan to release all the browned and blackened bits. Let the wine cook down.

In a separate bowl hand crush tomatoes and add to peppers and onion along with oregano and stir. Then add sliced sausages and bring heat down to low.

Cover pan with lid and simmer until peppers are soft and sausages are fully cooked through. This should take around 25 minutes. .

While sausages are simmering Make dried Penne according to package directions and add to pan once sausage mixture is ready. Stir slightly to combine flavours and top with Parmesan Cheese if desired.

This goes nicely with a simple green salad and a loaf of crusty bread.
