A simple side that combines freshly chopped greens, cooked rice and flavourful Italian dressing.
|2 tbsp||(30 mL) Italian salad dressing|
|¼ cup||(50 mL) Chopped green peppers|
|¼ cup||(50 mL) Chopped red peppers|
|¼ cup||(50 mL) Finely chopped red onion|
|½ cup||(125 mL) Chopped mushrooms|
|1 cup||(250 mL) Boiling water|
|1 cup||(250 mL) Instant rice|
|Salt and pepper to taste|
HEAT salad dressing in a saucepan over medium-high heat. Add peppers, red onion and mushrooms and sauté for 1 to 2 minutes.
ADD boiling water and rice; stir, cover and remove from heat. Let stand for 5 minutes.
FLUFF with a fork and season to taste before serving.
ALTERNATIVE SERVING: Replace Italian salad dressing with Greek vinaigrette and sprinkle with crumbled Feta cheese and sliced black olives before serving.
