About this Recipe

A simple side that combines freshly chopped greens, cooked rice and flavourful Italian dressing.


2 tbsp (30 mL) Italian salad dressing
¼ cup (50 mL) Chopped green peppers
¼ cup (50 mL) Chopped red peppers
¼ cup (50 mL) Finely chopped red onion
½ cup (125 mL) Chopped mushrooms
1 cup (250 mL) Boiling water
1 cup (250 mL) Instant rice
Salt and pepper to taste


HEAT salad dressing in a saucepan over medium-high heat. Add peppers, red onion and mushrooms and sauté for 1 to 2 minutes.

ADD boiling water and rice; stir, cover and remove from heat. Let stand for 5 minutes.

FLUFF with a fork and season to taste before serving.

ALTERNATIVE SERVING: Replace Italian salad dressing with Greek vinaigrette and sprinkle with crumbled Feta cheese and sliced black olives before serving.
