2 | Dempster’s® 12 Grain Bagels, lightly toasted |
2 tbsp | (30 mL) Softened butter |
1/2 cup | (125 mL) Arugula |
2 | Eggs, poached or fried |
Salt and pepper | |
4 tbsp | (60 mL) Giardiniere, chopped |
PREHEAT oven to 350°F (180°C).
ARRANGE prosciutto on a parchment paper lined baking sheet. Bake in preheated oven for 8-10 minutes or until very crispy.
SPREAD the cut side of each bagel with butter. Top with arugula, a slice of prosciutto and a poached or fried egg. Season the egg with salt and pepper. Scatter chopped giardiniere over top and serve.
