|2||Dempster’s® 12 Grain Bagels, lightly toasted|
|2 tbsp||(30 mL) Softened butter|
|1/2 cup||(125 mL) Arugula|
|2||Eggs, poached or fried|
|Salt and pepper|
|4 tbsp||(60 mL) Giardiniere, chopped|
PREHEAT oven to 350°F (180°C).
ARRANGE prosciutto on a parchment paper lined baking sheet. Bake in preheated oven for 8-10 minutes or until very crispy.
SPREAD the cut side of each bagel with butter. Top with arugula, a slice of prosciutto and a poached or fried egg. Season the egg with salt and pepper. Scatter chopped giardiniere over top and serve.
