Italian cookout with an Eastern twist. Delicious in any country!
|4||Dempster's Original Hamburger Buns|
|500 g||Ground beef|
|4||Lobster tails, fresh or frozen, or a mixture of lobster claws and tails|
|1 tbsp||Coarse salt and pepper|
|1 tbsp||Olive oil|
|1/2 cup||Balsamic vinegar|
|3||Cloves garlic, grated|
|3 tbsp||Fresh oregano|
|1 tsp||Red chili flakes|
|2 cups||Unsalted butter, cut into chunks|
Using olive oil soaked onto a paper towel, coat the grill rack with olive oil. Preheat the grill with high, direct heat.
Mix hamburger and season to taste Place on the hot grill and close the cover. Grill for 4-6 minutes on each side. When the burgers have cooked to preferred level of doneness, remove from the grill and place on a cutting board. Cover with aluminum foil and let rest for 10 minutes.
To butter poach the lobster, bring water to a boil in a medium saucepan and reduce heat to low. Begin adding the chunks of butter, one piece at a time, whisking to emulsify. Once the emulsion is started, more butter may be whisked in faster. Do Not Boil the Butter as the emulsion will break. The mixture should have the consistency of a very thick butter sauce.
Add lobster to the saucepan and butter poach for 5 to 7 minutes, turning the lobster every minute or 2., until lobster is white in colour.
Open Buns and top with hamburger and a generous portion of lobster. If desired, sprinkle red chili flakes to add additional colour and flavour.
