This is a rustic presentation of an easy and delicious one-dish meal. Great for busy weeknights!
|1 tbsp||(15 mL) Olive oil|
|1 tbsp||(15 mL) Garlic, minced|
|1 tsp||(5 mL) Chili flakes|
|3||Small peppers, cut into strips|
|1||Small red onion, cut into strips|
|1||(300 g) Package (4 pieces) Schneiders® Chicken Smoked Sausage, Italian, cut in half|
|1/4 cup||(60 mL) Chicken stock|
|1 cup||(250 mL) Canned white beans, rinsed and drained|
|Salt and pepper|
|1/2 tsp||(2 mL) Chopped fresh oregano|
|1/4 cup||(60 mL) Grated Parmesan cheese|
HEAT oil in a large skillet over medium-high. Sauté garlic, chili flakes, peppers and onion for 3-4 minutes or until soft and beginning to brown.
ADD sausage and continue to cook for another 2-3 minutes. Add chicken stock and toss in beans; stir to combine. Season with salt and pepper.
GARNISH with fresh oregano and sprinkle with Parmesan cheese.
