1 tbsp | (5 mL) Italian seasoning |
1 | Head Iceberg lettuce, shredded |
2 | Tomatoes, diced |
2 | Stalks celery, diced |
1 | Red pepper, diced |
1 | Yellow pepper, diced |
2 | Hard-boiled eggs, quartered |
1/4 cup | (60 mL) Pitted black olives, sliced |
1/4 cup | (60 mL) Italian dressing |
SEASON the chicken with Italian seasoning on both sides. Heat the oil in a large non-stick skillet over medium heat. Sear the chicken for 3-4 minutes per side or until slightly browned. Cover and continue to cook for about 15 minutes, turning frequently until the internal temperature reaches 165°F (74°C). Remove from heat.
ARRANGE the shredded lettuce in a large salad bowl. Top with prepared vegetables and quartered eggs. Slice the chicken breasts and arrange over the salad. Sprinkle with black olives and drizzle with Italian dressing.
