|1||Head Iceberg lettuce, shredded|
|2||Stalks celery, diced|
|1||Red pepper, diced|
|1||Yellow pepper, diced|
|2||Hard-boiled eggs, quartered|
|1/4 cup||(60 mL) Pitted black olives, sliced|
|1/4 cup||(60 mL) Italian dressing|
SEASON the chicken with Italian seasoning on both sides. Heat the oil in a large non-stick skillet over medium heat. Sear the chicken for 3-4 minutes per side or until slightly browned. Cover and continue to cook for about 15 minutes, turning frequently until the internal temperature reaches 165°F (74°C). Remove from heat.
ARRANGE the shredded lettuce in a large salad bowl. Top with prepared vegetables and quartered eggs. Slice the chicken breasts and arrange over the salad. Sprinkle with black olives and drizzle with Italian dressing.
