2 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts
1 tsp (5 mL) Italian seasoning
1 tbsp (5 mL) Italian seasoning
1 Head Iceberg lettuce, shredded
2 Tomatoes, diced
2 Stalks celery, diced
1 Red pepper, diced
1 Yellow pepper, diced
2 Hard-boiled eggs, quartered
1/4 cup (60 mL) Pitted black olives, sliced
1/4 cup (60 mL) Italian dressing


SEASON the chicken with Italian seasoning on both sides. Heat the oil in a large non-stick skillet over medium heat. Sear the chicken for 3-4 minutes per side or until slightly browned. Cover and continue to cook for about 15 minutes, turning frequently until the internal temperature reaches 165°F (74°C). Remove from heat.

ARRANGE the shredded lettuce in a large salad bowl. Top with prepared vegetables and quartered eggs. Slice the chicken breasts and arrange over the salad. Sprinkle with black olives and drizzle with Italian dressing.
