A fresh Italian inspired salad using delicious Italian bread and seasonal ingredients.

Ingredients

SALAD:
1 Batch Villaggio Home Made Croutons (see recipe)
2 cups (500 mL) Cherry tomatoes, halved
1/2 Large English cucumber, seeded and cut into 1” (2.5 cm) cubes
1 Yellow pepper, cut into 1” (2.5 cm) cubes
1 Orange pepper, cut into 1” (2.5 cm) cubes
1/2 Red onion, thinly sliced
1/2 cup (125 mL) Roughly chopped basil
1 cup (250 mL) Cocktail or pearl Bocconcini cheese
2-3 tbsp (30-45 mL) Capers, drained (optional)
Salt and pepper
VINAIGRETTE:
1 tsp (5 mL) Minced garlic
1/2 tsp (2 mL) Dijon mustard
3-4 tbsp (45-60 mL) White balsamic vinegar
1/2 cup (125 mL) Olive oil
Salt and pepper

Directions

HOME MADE VILLAGGIO CROUTONS:
PREHEAT oven to 375°F (190°C).

TOSS together 6 slices Villaggio® Original Thick Sliced Italian Style White Bread, cut into 1” (2.5 cm) pieces, ¼-⅓ cup (60-80 mL) olive oil, 1 tsp (5 mL) garlic powder, ½ tsp (2 mL) each – dried basil, thyme, oregano, salt and pepper. Place on a baking sheet and bake in preheated oven for 15-20 minutes or until golden brown. Set aside to cool.

SALAD:
TOSS together all ingredients, including croutons, in a large salad bowl. Season with salt and pepper.

VINAIGRETTE:
WHISK together all ingredients and toss with salad. Allow to sit for 20-30 minutes for flavours to combine.
