Intense Herbalicious Chicken Cutlets with Fruity Nut Couscous

About this Recipe

Adding fruit to the couscous is a welcomed sweetness, adding balance to the herbed chicken.

Ingredients

CHICKEN:
1 Package Maple Leaf Prime Naturally® Thin Sliced Chicken Breasts
1/4 cup (60 mL) Olive oil
1/4 cup (60 mL) Lime juice
1/2 cup (125 mL) Chopped cilantro
2 tsp (10 mL) Cumin
Salt and pepper
COUSCOUS:
1 cup (250 mL) Couscous
1 Green onion, sliced
1/3 cup (80 mL) Slivered almonds
1/4 cup (60 mL) Finely chopped dried apricots
1/4 cup (60 mL) Finely diced red pepper
1 tsp (5 mL) Cumin
Salt and pepper
DRESSING:
1/4 cup (60 mL) Olive oil
2 tbsp (30 mL) Chopped fresh cilantro
3 tbsp (45 mL) Lime juice
1 Clove of Garlic, minced
2 tsp (10 mL) Honey
1 tsp (5 mL) Ground cumin

Directions

CHICKEN:
PLACE chicken in a large resealable plastic bag.

MIX together olive oil, lime juice, cilantro, cumin, salt and pepper. Pour over chicken, seal bag and refrigerate for 30 minutes.

PREHEAT BBQ to medium-high.

GREASE grill and cook chicken for 4-5 minutes per side or until chicken has reached an internal temperature of 165°F (74°C).

COUSCOUS:
PREPARE couscous according to package directions. Stir in green onion, almonds, apricots, red peppers and cumin. Season with salt and pepper.

DRESSING:
WHISK all dressing ingredients together and drizzle over prepared couscous.

SERVE chicken with couscous.
