This is an easy way to make a tostada-type breakfast that will definitely satisfy your hunger until lunch! Top with spicy salsa, sour cream and green onions to serve.

|8||Eggs, lightly beaten|
|125 ml||Canned black beans, rinsed and drained|
|250 ml||Shredded jalapeño Havarti cheese OR taco cheese mix|
|50 ml||Mild salsa|
|50 ml||Sour cream|
|50 ml||Sliced green onion|
PREHEAT oven to broil.
SLICE pita in half horizontally; toast lightly.
COOK eggs in a non stick frying pan over medium heat.
STIR in black beans.
DIVIDE egg mixture and cheese among 4 of the 8 pita halves. Broil halves with filling for 2 or 3 minutes, until cheese melts.
TOP with salsa, sour cream and green onion. Close sandwiches with remaining pita halves.
