Ingredients

2 Slices Dempster’s WholeGrains® Ancient Grains Bread, lightly toasted
2 tbsp (30 mL) Chipotle mayonnaise
8 Slices Capocollo and/or salami
1 Slice spicy Havarti cheese
1/2 Roasted red pepper, cut into strips
1/4 cup (60 mL) Baby spinach leaves
CHIPOTLE MAYONNAISE:
1 cup (250 mL) Mayonnaise
1 Clove garlic, minced
1/2 tsp (2 mL) Horseradish
1 Chipotle in adobo sauce, finely chopped
2 tsp (10 mL) Lemon juice
Salt and pepper

Directions

WHISK together all of the ingredients for the chipotle mayonnaise.

SPREAD each slice of bread with chipotle mayonnaise. Top one slice with meat slices, cheese, peppers, spinach and the remaining slice of bread.


Notes

Leftover chipotle mayonnaise can be stored in the refrigerator for up to 3 weeks. Use as a dip for vegetables or a sandwich spread.
