Honey-Pepper Braised Bacon Chicken

About this Recipe

This is one of our go-to favourites that everyone in the family enjoys. Served over rice or noodles, it's a wonderful meal.

Ingredients

2 tbsp Olive Oil
1 lb Boneless Chicken Thighs
1/2 cup Chicken Broth
3/4 cup Honey
1/8 cup Ground peppercorns (coloured)
1 Pkg Bacon
1/2 cup Shredded Carrot
1 Bell Pepper, thinly sliced

Directions

1. Cook Bacon (soft-medium). Remove from pan and chop.
2. In the bacon pan, add olive oil (to bacon grease) and fry chicken thighs until golden brown on the outside.
3. Remove cooked chicken, add carrots and pepper and fry until soft. Return Chicken and bacon to the pan.
4. In a separate bowl, mix, broth, honey, and pepper.
5. Pour over chicken and simmer for 30 minutes.
6. Serve over rice or noodles.
