|1 tbsp||(15 mL) Vegetable oil|
|2 ½ cups||(625 mL) Baby carrots|
|½ cup||(125 mL) Orange juice|
|1 tbsp||(15 mL) Liquid honey|
|Parsley, coarsely chopped|
HEAT oil in a large nonstick skillet or wok over medium-high heat. Add carrots and stir-fry for 3 to 5 minutes.
ADD orange juice and continue cooking, stirring constantly, until no liquid is left in pan, approximately 4 to 5 minutes.
REMOVE from heat and drizzle with honey. Shake pan to glaze carrots.
SPRINKLE with chopped parsley and serve immediately.
Replace honey with pure maple syrup for a different flavour profile.
