|1 bunch||Green onion, cut into 2 inch (5 cm) pieces|
|1||Small yellow zucchini|

PREHEAT grill to medium heat. Lightly coat the grill with non-stick cooking spray.
THREAD chicken cubes onto skewers, alternating with green onion and peppers.
USING a “Y” shaped vegetable peeler, cut cucumbers into ribbons, discarding the seeds and place in a bowl. Repeat with carrots and zucchini. Add chillies if using. Refrigerate until ready to use. Toss with vinaigrette just before serving.
PLACE chicken skewers on the preheated grill and cook for 20-22 minutes turning occasionally until nicely char-grilled and the internal temperature reaches 165°F (74°C).
SERVE with ribbon salad.
If using wooden skewers, soak in water for 15-20 minutes to prevent burning.
