Honey Garlic Chicken Breast with Bacon Roasted Potatoes

The perfect intimate dinner for you and your loved ones. This chicken dish is full of seasonal flavors and is complimented perfectly by the bacon roasted potatoes.

Ingredients

2 Maple Leaf Prime Naturally® Portions Honey Garlic Chicken Breasts
4 slices Maple Leaf® Bacon, chopped into 1” (2.5 cm) pieces
1/2 lb (225 g) Mini potatoes, halved
1 tbsp (15 mL) Chopped fresh chives

Directions

OVEN METHOD:
PREHEAT oven to 350°F (180°C). Arrange chicken breasts in a lightly greased ovenproof baking pan. Cover with aluminum foil and bake for 10 minutes. Remove foil and continue to bake for 10-15 minutes or until cooked through to an internal temperature of 165°F (74°C).

BARBECUE DIRECTIONS:
PREHEAT barbecue to medium-high. Lightly coat the grill with a non-stick cooking spray. Cook chicken for 1-2 minutes per side or until evenly char-grilled. Reduce temperature to medium-low and continue to cook turning occasionally for 8-10 minutes or until the internal temperature reaches 165°F (74°C).

COOK bacon in a medium skillet until just cooked but not crisp. Add potatoes to the pan drippings and toss to coat. Transfer to a shallow baking pan along with the bacon and place in preheated oven for 20 minutes or until potatoes are cooked and golden brown. Remove from heat and sprinkle with chives. Divide between two serving plates and serve with Honey Garlic Chicken breast.

Notes

Serve with your favourite vegetable or side dish.
