|1 1/2 cups||(375 mL) Flour|
|4 tsp||(20 mL) Salt, divided|
|4 tsp||(20 mL) Pepper, divided|
|3 tbsp||(45 mL) Ground ginger|
|2 tbsp||(30 mL) Ground nutmeg|
|2 tsp||(10 mL) Thyme leaves|
|2 tsp||(10 mL) Ground sage|
|2 tbsp||(30 mL) Paprika|
|1 tsp||(5 mL) Cayenne pepper|
|1/4 cup||(60 mL) Milk or water|
|1/2 cup||(125 mL) Vegetable oil|
|HONEY GARLIC SAUCE:|
|2 tbsp||(30 mL) Olive oil|
|4||Cloves garlic, minced|
|1 cup||(250 mL) Honey|
|1/4 cup||(60 mL) Soy sauce|
|1 tsp||(5 mL) Pepper|
SEASON chicken with salt and pepper. Combine flour with remaining spices in a shallow bowl.
WHISK egg and milk or water in a separate shallow bowl.
HEAT oil in a large skillet over medium-high.
DREDGE chicken in flour mixture, then dip into the egg wash and finally into the flour mixture again.
FRY chicken for 3-4 minutes per side or until golden brown and crisp. The internal temperature must reach 165°F (74°C).
HONEY GARLIC SAUCE:
HEAT olive oil in a small saucepan over medium. Add garlic and cook for 1-2 minutes or until fragrant but not browned. Add remaining ingredients and simmer for 5-10 minutes. Remove from heat. Drizzle sauce liberally over crisp chicken pieces.
Garnish with chopped green onions.
