How yummy does this look/! And this is before it hits the oven! When all is said and done though, I still think I'll prefer chopping up this baby and making split pea soup with the hock in the morning. Alas tomorrow is another day...
|2||Red Onions halved|
|1 bunch||Leeks cleaned and sliced in 2 vertically|
|1 tbsp||Whole Peppercorns|
|2 tbsp||Whole Cloves|
|1/2 cup||Brown Sugar|
|1/4 cup||Dry Mustard Powder|
|1 tbsp||Black Pepper|
-In a roasting dish layer red onion, leeks, carrots, 1 tbsp peppercorns, a cinnamon stick and two bay leaves
Score and stud the ham with cloves (oh behave) and sprinkle it with brown sugar and dry mustard and pepper
-Pour a can of cola in the bottom of the roasting pan
-Roast the ham at 400 degrees for 10 minutes then turn down the oven to 325 degrees and start glazing and basting alternately every 15 minutes for about 1/2 -45 min
-When it's ready remove the ham from the pan and tent it with foil and set aside to rest
-Remove the veggies from the cola and the roast drippings, when ready to slice the ham, place it in the left over pan drippings to keep sweet and moist.
What goes better together than cola and ham during the holidays?!
