This is my homemade chicken soup, got the chicken stock from my other recipe "Roasted Chicken with Lemon potatoes".
This is perfect for those cold winter days, when you want to serve them something hot and filling. I serve it with homemade bread or bannock.
Maple Leaf Prime Boneless Skinless Chicken pieces (chicken breast, thighs, leftovers) | |
6 cups | homemade chicken broth |
3 | stalks of celery cut into bite sized pieces |
4 | carrots, peeled and cut into bite sized pieces |
1 | small onion, chopped |
1 | bay leaf, thyme, rosemary, basil, etc |
2 cups | rice |
Cut up chicken into bite-sized pieces, add to broth.
Wash and cut up vegetables and put into chicken broth.
Add bay leaf, spices and let simmer until veggies are semi tender.
Then add rice, let simmer again until veggies and rice are ready, about an hour. Season to taste.
Serve in bowls with fresh bread.
So nice on a cold day.
If you don't have the homemade chicken broth, you can use store bought or you can just use water, simmer chicken and onion and celery, add seasonings, let simmer for a few hours. Add some chicken bouillon too. Then add the carrots then the rice, let simmer until carrots and rice are ready. This is longer but it is just as good since you don't have chicken broth on hand.
