Creamy scalloped potatoes with ham and tender chicken breast... a perfect holiday meal!

Ingredients

2 Maple Leaf Prime Marinated Boneless Skinless Dijon Mustard and Herbs Chicken Breasts
1.5 cups Maple Leaf Country Kitchen Smoked Ham
2 tbsp butter
1 small onion finely chopped (1/4 cup)
3 tbsp flour
1/2 tsp salt
1/4 tsp pepper
2.5 cups milk
5 medium peeled or unpeeled potatoes thinly sliced (6 cups)
1 tbsp butter

Directions

Prepare Scalloped Potatoes:

Heat oven to 350°F. Spray 2-quart casserole with cooking spray.

In 2-quart saucepan, melt 2 tablespoons of butter over medium heat. Cook onion in butter about 2 minutes, stirring frequently, until onion is tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly. Stir in milk. Heat until boiling, stirring constantly. Boil and stir 1 minute.

Mix potatoes and ham in casserole; gently press down so surface is even. Pour sauce over potato mixture. Cut 1 tablespoon butter into small pieces; sprinkle over potatoes. Cover and bake 30 minutes. Uncover and bake 1 hour or until potatoes are tender. Let stand 5 to 10 minutes before serving.

Prepare Chicken Breast:

Place chicken on a parchment paper lined baking sheet and roast in the preheated oven for about 20 minutes or until cooked through to an internal temperature of 165°F. Let rest for 5-7 minutes. Keep warm, and slice before serving.
