Prepared for a gathering of friends, this cheese ball is a nod to all the wonderful tastes on an antipasto platter: smoked ham, sun dried tomatoes, black olives, grilled artichokes and great Reggiano.
|100 g||finely diced Maple Leaf Country Kitchen Smoked Ham|
|225 g||light deli style cream cheese|
|125 g||good quality ricotta cheese|
|75 g||grated reggianno Parmesan cheese|
|100 g||grilled artichoke hearts in oil, drained and finely chopped|
|60 g||oil preserved sun dried or oven roasted tomatoes, finely diced|
|40 g||pitted kalamata olives, finely chopped|
|2 tbsp||finely diced red onion or chives|
|salt, pepper or cayenne to taste if desired|
Mix the cheeses together in a large metal or glass bowl.
Add the diced and chopped ingredients into the cheese mixture and mix well with a fork.
Season if you wish but taste the mixture first, before seasoning .
Roll the mixture into a ball. Place into a covered bowl or container, and refrigerate overnight.
Serve with a variety of nice crackers or flat bread. Garnish with olives and pickles.
This recipe will yield two cheese balls so you have the option of serving one spicy and one mild.
1. You may roll the cheese balls in a coating such as Parmesan cheese, crushed pistachio nuts, a mix of garlic and paprika., etc.
