Inspired by the Peking Duck served at a 10 course Chinese meal we had for my parents' 40th anniversary, I came up with this quick and easy recipe to enjoy at home. Dempster's tortilla replaced the wraps from the restaurant, and roasted chicken replaced the duck.
|10||Dempster's Tortillas Original 7 in.|
|2 lb||Roasted Chicken (use leftovers for another recipe the next day)|
|Red Pepper (or hot pepper if you like spicy)|
For the chicken, you can either use this Foodnetwork Hoisin Chicken recipe http://www.foodnetwork.com/recipes/food-network-kitchens/hoisin-glazed-roast-chicken-recipe.html OR if you're in a rush, a rotisserie chicken from your local supermarket will do.
Slice chicken in 2/3 in thickness, making sure to get some of that flavourful skin showing.
Wash, clean, and prepare green onion, cutting about 2-3 in above the white part.
Cut hot pepper into small rings to place around the green onion as garnish.
Lay Dempter's tortillas on flat working surface, arrange 1-2 slices of roasted chicken and 1 green onion with pepper garnish. Drizzle Hoisin Sauce over the chicken, green onion and pepper. Fold and enjoy!
*For this recipe, I used rotisserie chicken, so prep and total time are at minimum.
