Tender and spicy chicken thighs served over a fresh spring salad popping with crunch from multigrain croutons, peppery radishes and cool cucumbers all drizzled with Asian sesame vinaigrette.

Ingredients

MARINATED CHICKEN THIGHS:
1 Package Maple Leaf Prime Naturally® Boneless Skinless Chicken Thighs
.33 cup (80 mL) Chopped fresh basil
.33 cup (80 mL) Chopped fresh cilantro
1 tbsp (15 mL) Freshly grated ginger root
2 Cloves garlic, minced
1 tsp (5 mL) Red chili flakes
2 tbsp (30 mL) Fish sauce
2 tbsp (30 mL) Soy sauce
2 tbsp (30 mL) Vegetable oil
2 tbsp (30 mL) Brown sugar
Salt and pepper
CROUTONS:
1 Dempster’s® OvenFresh™ Baguette, cut into 1 inch (2.5 cm) cubes
.25 cup (60 mL) Olive oil
1 tsp (5 mL) Italian seasoning
Salt and pepper
SALAD:
8 cups (2 L) Mixed baby greens
4 Radish, thinly sliced
1 Cucumber, seeded and chopped
2 tbsp (30 mL) Rice vinegar
2 tbsp (30 mL) Vegetable oil
1 tbsp (15 mL) Soy sauce
2 tbsp (30 mL) Lime juice
1 tbsp (15 mL) Honey
1 Clove garlic, minced
1 tsp (5 mL) Sesame oil

Directions

MARINATED CHICKEN THIGHS:

PLACE chicken thighs into a large re-sealable plastic bag. Whisk together remaining marinade ingredients and pour over chicken. Seal bag and gently massage marinade into the chicken. Refrigerate for at least 30 min.

CROUTONS:
PREHEAT oven to 375°F (190°C). Place bread in a large bowl. Drizzle with olive oil. Sprinkle with Italian seasoning, salt and pepper and toss to coat. Spread on a baking sheet and bake in preheated oven for 15 minutes or until crisp and golden brown. Set aside to cool.

PREHEAT barbeque to medium-high. Lightly coat the grill with non-stick cooking spray. Remove chicken from marinade, discarding any remaining marinade. Grill chicken for 4-5 minutes per side or until nicely browned and the internal temperature has reached 165°F (74°C).

SALAD:
TOSS together greens, radishes, cucumbers and croutons in a large salad bowl. Whisk together vinegar, oil, soy sauce, lime juice, honey, garlic, sesame oil and pepper and drizzle over salad.

IMMEDIATELY serve salad with chicken.
