This elegant salad is the perfect lunch or serve for a light dinner!
|6||slices Schneiders® Salt Reduced Bacon|
|2||large heirloom tomatoes, sliced|
|1||whole ball burrata cheese|
|1 tbsp||(15 mL) olive oil|
|1/4 cup||(60 mL) pea shoots or watercress|
HEAT a large skillet over medium high heat.
COOK bacon 3 to 4 minutes per side or until desired crispness.
REMOVE onto paper towel lined plate.
ARRANGE tomatoes onto plate.
PLACE burrata over top.
DRIZZLE tomatoes and cheese with olive oil and season with salt and pepper.
ARRANGE bacon onto plate.
GARNISH with pea shoots.
SERVE with rosemary crostini.
