Start the day right with this lean and light style breakfast dish.


6 slices Maple Leaf Prime® Bacon Style Turkey
2 tbsp (30 mL) olive oil + 1 tbsp (15 mL)
6 egg whites, whisked
4 cups (1000 mL) baby spinach
1 pint cherry tomato, halved
4 slices gluten free grain toast, toasted
Fruit, assorted
Almond butter


HEAT olive oil in a large skillet.

COOK bacon 2 to 3 minutes or until desired crispness.

REMOVE onto paper towel lined tray.

SET aside and keep warm.

IN the same skillet add spinach.

COOK stirring frequently until spinach just wilts.

REMOVE onto plate. Season with salt and pepper.

ADD remaining tbsp of olive oil to pan.

COOK egg whites and scramble until desired doneness.

DIVIDE ingredients between two plates.

SEASON cherry tomatoes and serve alongside egg whites.

SERVE with gluten free toast and almond butter and a side fruit bowl.


Serve with fresh squeezed orange juice.
