Try a healthier version of Eggs Benedict by using lean Maple Leaf Country Kitchen ham and by omitting the Hollandaise sauce. Fill a small saucepan halfway with water, and add vinegar. Bring to a boil and reduce to simmering. Crack an egg into a small bowl. Swirl the hot water and slowly pour in the raw egg. Repeat with the other egg. Simmer for about a minute and a half to two minutes.
Meanwhile, toast English muffin halves. Place the ham slices on top of each muffin.
Using a small strainer, carefully place the soft eggs on top each ham slice. Garnish with strawberries and enjoy this classic dish without the guilty calories.
