Fast an easy dinner to prepare - kids love this!
|3/4 lb||Schneiders Cooked ham|
|1 can||pineapple chunks with juice|
|1 tbsp||Dijon mustard|
|1/3 cup||pineapple juice from above|
Heat BBQ on high
Slice ham into 1in thick slices, then cut the slices into cubes approx 1 x 1
Cut red pepper and green pepper in 1 x 1 pieces
Drain pineapple chunks and reserve the pineapple juice for later.
Thread pineapple chunks, peppers, ham & grape tomatoes alternating onto skewers.
Meanwhile, take ⅓ cup of reserved pineapple juice and mix well with Dijon mustard - brush all kabobs liberally with Dijon/juice mixture.
Place kabobs on lightly oiled grill - Cook for 6 to 8 minutes, brushing often with juice and dijon and turning frequently. Should be lightly glazed when done.
Serve on bed of rice or quinoa for a complete meal.
