This cheesy Hasselback chicken is so pretty with the spinach and so easy to make. Oh yes, and did I mention it’s delicious?
|4||Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts|
|Salt and pepper|
|4||Slices Maple Leaf® Natural Selections® Naturally Smoked Ham, cut into 1-2” (2.5-5 cm) strips|
|4 oz||(112 g) Gruyere cheese, cut into 1-2” (2.5-5 cm) strips – ½” (1 cm) thick|
|1 cup||(250 g) Baby spinach, stems removed|
|2 tbsp||(30 mL) Olive oil|
PREHEAT oven to 350°F (180°C). Arrange chicken breasts on a parchment paper lined baking sheet. Season with salt and pepper and cut slits crosswise in each chicken breast about 1” (2.5 cm) apart and almost all the way through leaving the bottom surface intact. Drizzle with olive oil and place strips of ham and cheese into each slit followed by 3-4 leaves of spinach.
BAKE in the preheated oven for 22-25 minutes or until the internal temperature reaches 165°F (74°C).
SERVE with your favourite side dish and salad or vegetable.
